Healthy yellow lentil recipe with sepia and vegetables, a different way to eat legumes

A couple of months ago I wanted to give out some yellow lentils that I brought from the UK. I wanted to do something original with them and today I found the way. I have prepared some yellow lentils with sepia and vegetables that look like rice entirely. A trick that has left my guests surprised and delighted when they have discovered the truth.

Since yellow lentils are a quick-cooking legume, I have followed the same procedure as if I were preparing rice. I have only had to adjust the amount of liquid to the necessary cooking time and the thing has rolled. These yellow lentils with sepia and vegetables have proven to be a success, as well as a nutritious and healthy dish.

How to make yellow lentils with sepia and vegetables

We start preparing a sauce with vegetables. To do this, we peel the garlic and cut it into fine brunoise. Peel the onion, wash the peppers and chop them into pieces of equal size. They must be small, but not tiny. That is, we do not need a brunoise. We leave that only for the garlic clove.

We cover the base of an oven-safe casserole with virgin olive oil and heat it. Fry the garlic over low heat, taking care not to brown to prevent bitterness. Add the onion and the two types of pepper and sauté over medium heat for about 15 minutes. We remove occasionally so that they do not cling to the bottom.

While the stir fry is done, we wash and drain the sepia well. We cut it into dice of a size similar to that of vegetables and dry them with absorbent paper. Add the cuttlefish to the sauce, stir and cook over medium-high heat for five minutes or until the juice released has evaporated, if not completely, in large part. Season to taste.

Next, we incorporate the lentils and the vegetable stock, which must be very hot so that the cooking process does not stop. Remove and adjust the salt point if necessary. Cook over medium heat for 20 minutes. Transfer the casserole to the oven, pre-heated to 190ºC, and cook for 20 more minutes. Let stand five minutes before serving.

The yellow lentils with cuttlefish and vegetables are a dish to taste the lunch, without an accompanying aioli or mayonnaise simple. Although these lentils are not heavy and are easily digested, because they lack skin, the whole is enough to constitute a unique dish. A dessert and coffee will be enough to finish the play.
